Potato Salad Recipe


  • 1.5kg Desiree or Chat potatoes
  • 6 rashers rindless bacon
  • ¼ cup whole egg mayonaise
  • 1 red onion
  • 6 shallots or spring onions


  1. Wash, peel and cut the potatoes into small bite sized chunks.
  2. Place the potatoes into a saucepan and cover with cold water. Heat on high until the water begins to boil. Reduce the heat and leave the potatoes to simmer for another 4 to 5 minutes. Cook until the potatoes become soft. When finished move the cooked potatoes into a large bowl.
  3. Peel and cut the red onion and then dice into small pieces.
  4. Chop and finely slice the shallots or spring onions into  and put aside.
  5. Fry the bacon over a high heat until brown. Place onto paper towel to remove the surface grease and then cut into small strips.
  6. Combine the mayonaise, bacon, red onion and shallots or spring onions and add to the potatoes. Combine slowly and carefully to prevent any potatoes from breaking up or mashing.
  7. Cover and refrigerate the salad for 2 or more hours for serving.
