Roast Potato Recipe


  • 2kg Sebago, Desiree or Coliban potatoes
  • 2 tablespoons Olive oil
  • 60g melted butter
  • Sea salt


  1. Preheat the oven to 180° C. Peel and quarter the potatoes.
  2. Place the potatoes into a saucepan and cover with cold water. Bring the water to the boil on high heat and then reduce to medium heat. Simmer for 10 to 15 minutes or until the potatoes are tender.
  3. Brush a large baking tray with oil and begin placing the potatoes onto it ‘cut down’.
  4. With a fork, drag the prongs over each potato to create tracks on the surfaces. Using the brush, cover the potatoes with the melted butter.
  5. Roast for 40 to 50 minutes in the oven or until the potatoes are golden brown.
  6. Season the cooked potatoes with salt and serve as soon as possible.
