Ingredients:
- 1kg Russet or Desiree potatoes
- 1 yellow/white onion
- 50g butter
- 300ml carton pouring cream
- 1 cup grated cheddar cheese
- Black pepper
- Sea salt
Instructions:
- Preheat the oven to 200° C. Grease a large (5-6cm deep) oven-proof dish.
- Halve and slice the onion into small, thin pieces.
- Melt the butter in a saucepan on medium heat and then add the onion. Cook until soft (or for roughly 5 minutes). Set this aside.
- Transfer the cream into a pouring container and add a pinch of salt and pepper, combining them with form or spoon.
- Slice the potatoes into thin half centimeter circles. Arrange a layer of these into the prepared dish and cover with onions and the cream sauce. Repeat this until the potatoes run out.
- Securely cover the dish with foil.
- Bake for 35 to 45 minutes or until the potatoes are tender.
- Remove the foil covering, cover with the grated cheddar cheese and bake for another 30 minutes.
