Scalloped Potato Recipe

  • 1kg Russet or Desiree potatoes
  • 1 yellow/white onion
  • 50g butter
  • 300ml carton pouring cream
  • 1 cup grated cheddar cheese
  • Black pepper
  • Sea salt

  1. Preheat the oven to 200° C.  Grease a large (5-6cm deep) oven-proof dish.
  2. Halve and slice the onion into small, thin pieces.
  3. Melt the butter in a saucepan on medium heat and then add the onion. Cook until soft (or for roughly 5 minutes). Set this aside.
  4. Transfer the cream into a pouring container and add a pinch of salt and pepper, combining them with form or spoon.
  5. Slice the potatoes into thin half centimeter circles. Arrange a layer of these into the prepared dish and cover with onions and the cream sauce. Repeat this until the potatoes run out.
  6. Securely cover the dish with foil.
  7. Bake for 35 to 45 minutes or until the potatoes are tender.
  8. Remove the foil covering, cover with the grated cheddar cheese and bake for another 30 minutes.
